Buffalo Chicken Burgers



These spicy chicken burgers taste just like Buffalo wings! These burger deliver the bold flavors of Buffalo wings minus the mess and calories. Serve with additional hot sauce and blue dressing on the side.


Served these Buffalo Chicken Burgers with Red Robin Seasoned Fries & Campfire Sauce (yes, fries were from the grocery freezer section), Celery, and Fresh Cherries! Yum!
 

Buffalo Chicken Burgers ...


Ingredients:
  • 1 pound lean ground chicken
  • 1 small onion, chopped
  • 1/4 cup finely chopped celery (or 1 tsp dried celery flake)
  • 1/4 cup Frank's hot sauce
  • 2 ounces crumbled blue cheese
  • 1 dash ground cumin
  • 1 dash chili powder
  • ground black pepper, to taste
  • 1 dash crushed red pepper
Directions:
  1. In a large bowl mix all ingredients together. Form into 4 patties. Cook on a hot skillet, grill pan, or outdoor grill, 5 minutes per side or until cooked through.
 Optional Toppings: Lettuce, tomato, chopped celery, hot sauce, blue cheese dressing

Cherry 7-Up Biscuits





Happy Valentines' Day. I love this day since I can make everything pink and nobody complains! I make these 7-up Biscuits quite often (or at least when dinner requires a good biscuit). I had a bottle of Cherry 7-Up on hand and decided to give a whirl and see if they'd turn pink. They dough wasn't quite pink enough for what I was looking for so I opened a can of beets and added a tablespoon of the juice and that did the trick. 

FYI .. these do not taste like 7-up or Cherry 7-Up - they are a delicious flaky (very) buttery bisuit. No extra butter is necessary. They are great with a bit of jam on honey drizzled on them.


 
 Bisquick, Cherry 7-Up, Sour Cream, Butter, Beet Juice
 
Mix all ingredients, except the butter


Melt the butter in x 9x9 baking dish. Drop biscuits into buttered baking dish

Bake for 12-15 minutes

Cherry 7-Up Biscuits ....

Ingredients:
  • 2 c Bisquick
  • 1/2 c sour cream
  • 1/2 c Cherry 7-up
  • 1/4 c butter, melted
  • 1 tbsp beet juice (optional to make the color more intense)

Directions:

Mix Bisquick, sour cream and 7 up. Dough will be very soft - don't worry :)  Melt butter in bottom of cookie sheet pan or 9x9 baking dish. Drop biscuits on top of melted butter and bake for 12-15 minutes or until brown at 425 degrees.

Red Velvet Banana Bread






I know what you are thinking .. red velvet and bananas, really, it can't be so???? I thought the same thing. I read Ashton's post about her  Red Velvet Banana Bread on her Something Swanky blog a couple times to make sure she really thought this combination tasted good. And yes, after several re-reads I still questioned the combo. So I tired it myself. Oh my goodness!! It's an amazing banana bread with a hint of red velvet. It's hard to explain. Make it and try it yourself. It's only 4 ingredients. And everyone always has leftover bananas that they don't know what to do with, right? Try it .. really, it's awesome!





 You will need:

  • Ripened Bananas
  • 1 box of Red Velvet Cake Mix
  • Eggs
  • Oil

Greek Style Turkey Spinach Pita Sliders with Spicy Garlic Feta Sauce




These juicy and flavorful mini Turkey Spinach Burgers are seasoned with Greek-style seasonings and stuffed in mini pita pockets, topped with veggies and a Spicy Garlic Feta Sauce. Perfect for lunch, dinner, parties, Super Bowl, etc. 

The burgers and sauce can be made ahead. Grill /cook the burger patties right before you are ready to serve guests.

Prior to serving, I stuffed the pita pockets ahead with the veggies, covered, and stored in the refrigerator for a few hours. Then right before serving I grilled the patties, topped the veggies with the sauce and added the patties.





Turkey Spinach Burgers:

Ingredients:
1 pound lean ground turkey
2 cups baby spinach leaves, chopped
1 teaspoon cumin
1 teaspoon dried oregano
1 teaspoon dried parsley
2-3 cloves roasted garlic, smashed (or 1/2 teaspoon garlic powder)
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
12 mini pita pockets

Burger toppings: baby spinach leaves, tomato slices, thinly sliced red onions, and cucumber slices

Directions:
Mix the turkey, chopped spinach leaves, spices, garlic, salt and pepper  in a bowl Dampen your hands and shape the mixture into 12 small patties, about 1/2 inch thick.

Lightly brush a grill pan with the olive oil and heat over medium-high heat. Add half of the patties and cook until browned and cooked through, about 2-3 minutes per side. Transfer to a plate. Cook the remaining patties.

To serve, fill each mini pita pocket with a tomato slice, baby spinach leaves, thinkly sliced red onion, sliced cumber; spoon on some of the Spicy Garlic Feta Sauce on top of the veggies and then top with turkey patty.

Spicy Garlic Feta Sauce

Ingredients:

  • 8 ounces feta cheese crumbles, brought to room temperature
  • 2 Tablespoons olive oil
  • 4-8 cloves roasted garlic either purchased or homemade
  • 1/2 to 3/4 cup plain Greek-style yogurt 
  • 2 Tablespoons freshly squeezed lemon juice
  • 2 jalapeno peppers, diced (use fresh or roasted)

Directions:

Place feta cheese in your food processor* with a metal blade and pulse the feta cheese until it is completely broken up into tiny crumbs. Add the next 4 ingredients, starting with 1/2 cup of yogurt (increase the amount of yogurt if you would like a thinner sauce. I used 3/4 cup), and process, stopping to scrape down the sides occasionally, until it is completely smooth and creamy. Add salt and pepper to taste. Transfer to a small bowl and stir in, by hand, the diced jalapeno peppers. 

*I used my NutriBullet to make the sauce. You could also use a mini food processor to make this


Feta Cheese, Jalapeno Peppers (fresh or roasted), Roasted Garlic, Lemon, Greek-style Yogurt, Olive Oil
Mix all in a NutriBullet or food processor 
Serve or store in refrigerator 


You can serve on turkey burgers, hamburgers, sandwiches, or serve as a dip with pita chips.
